Multiple food safety violations found at Theobroma's Hyderabad central kitchen
Food safety officials have reported multiple violations of hygiene, storage, labelling and licensing norms at Theobroma Foods' central kitchen in Amberpet, Hyderabad, following a recent inspection. The bakery chain, a known name in the sector, now faces regulatory action under the Food Safety and Standards Act.
According to officials, frozen meat products were found stored at 6°C instead of the prescribed minus 18°C. Expired chicken wings were discovered at the facility and discarded on the spot. Raw meat was being handled without gloves, and inadequate cleaning and pest infestation were observed in the premises.
The inspection also noted cakes stored without adequate spacing, with water dripping from an air-conditioner onto the cakes. Dirty baking trays, wet and unclean floors, food spillage and uncovered dustbins were among the other hygiene lapses. Eggs with visible faecal contamination were found in the storage area, and several food articles were kept directly on the floor. Inadequate spacing between racks and walls was also recorded.
Officials pointed out deficiencies in the training of food handlers. The personnel had only basic training and certification, whereas specialised or advanced training was required for manufacturing activities, the inspection team noted.
Products that violated FSSAI labelling requirements were seized. Prepared dough and other items carrying shelf-life claims that were not substantiated were also flagged. Expired cream and chocolate products were confiscated because of improper adherence to the First-In, First-Out (FIFO) system.
As part of the enforcement action, about 24 kg of potatoes and 60 kg of chocolate callets affected by spoilage or mould contamination were discarded. Other unsafe, expired and mould-affected food items were disposed of on the spot.
The inspection further revealed licensing-related violations. The Food Business Operator (FBO) was found to have operated without a valid FSSAI licence for a period from April 20 to May 28, 2026. Officials also found that the licence categories and jurisdiction were not compliant with requirements. The transport agency associated with the operation was found to be functioning under an incorrect FSSAI category.
Notices have been issued and further regulatory action initiated over the violations. Appropriate action is being taken under the Food Safety and Standards Act and its relevant regulations, officials said.
